Full Version: Scottish Journey Bread/cake

Lasts at least 1 year in storage, but for us they are gone within 6 months

8 -- 1 pint wide mouth jars
lids and rings

2 c oatmeal
2 c yellow corn meal
2 c whole wheat flour
2 tsp baking powder
1 1/2 tsp soda
1 1/2 salt
1 1/4 c dried fruit bits (6oz)
1 c dates
1 c meat, Beef is best cut to small bites (optional)
1 1/4 c nuts or pecans
1 qt buttermilk
1 1/2 c molasses

Mix dry ingredients
stir in molasses and buttermilk
stir well, if too thick add 1/4 c water
grease jars and fill 2/3 full
loosely place cap and ring on jar
put into canner with rack
turn down water to simmer after boiling and steam for 3 hours

tighten lids after removing from water.

this stuff is soo good!! i'll have to make my own one day...... (unless someone is in the mood to make it for me...... hint, hint........ smile.gif

Was that a volunteer I hear to help cut up all the fruit, nuts and meat. I have to buy new lids and rings but have the large mouth jars ready. Just waiting for the summer heat to go away, 103 F. ( a little over 39 C. Like when a child runs a fever) Not fun aircondinter is taking a break. wacko.gif
