1/2 cup olive oil
1 cup onion chopped
1 cup green onion tops chopped
3/4 cups celery chopped
1 6oz can of tomato paste
1 7 1/2 oz can of tomato sauce
3 cups of water
2 tbs of vinegar
4 cloves garlic chopped
1 tsp sugar
salt, black and cayenne peppers to taste
cooked rice
[*] prepare shrimp and set aside
[*] heat oil in heavy cast iron pot over medium heat, cook onion celery and bell pepper until wilted.
[*] add paste, sauce, water and vinegar.
[*] Cook 40 minutes until the oil comes to the top whilst stirring occasionally.
[*] add shrimp
[*] add garlic, salt, sugar, peppers to taste and cook for 30 minutes,
[*] serve over cooked rice,
